Or “Mum’s Bread”. My mum gave me this recipe not long ago and it’s become a staple in our house, a little bit strange seeing I’m not a baker (too precise for me) and I don’t eat a lot of bread (makes me feel bloated) but this is soooo easy and fuss free to make and it’s made with spelt flour which although still containing gluten is easier to digest and contain a lot more nutrients than white flour. It’s super moist due to the yogurt and the nuts adds a bit of crunch and the goji berries some sweetness. I love it the Swedish way simply with butter and cheese but today I made an avocado mash with avocado, feta, lemon juice , dill and a pinch of salt and it was delicious too. My mum’s recipe was made using raisins but I find them a bit sweet so I replaced it with goji berries and I’ve also used both walnuts and hazelnuts whereas the original recipe was just hazelnuts so feel free to experiment. I think it would be delicious with olives and rosemary or roasted garlic as well, yum……..

Cook Time: 1 hour, 30 minutes


  • 1 cup oats
  • 2 cups wholemeal spelt flour
  • 1/2 cup goji berries (or raisins)
  • 1/2 whole hazelnuts / walnuts or a combination
  • 2 tsp bicarb soda
  • Pinch sea salt
  • 2 cups plain natural yogurt
  • 1 apple grated


  1. Mix dry ingredients in a bowl
  2. Add yogurt and apple and stir to combine
  3. Bake in 175c oven for 1.5hrs
