That’s a bit of a mouthful and not a very sexy name but at least it gives you an idea of what it is! Another porridge but I just couldn’t help myself as it’s so good. I’ve obviously been experimenting a lot with porridge for breakfast lately, the cooler weather makes me crave something warming and sweet instead of my usual breakfast salads.
This is a delicious grain free version that got the tick of approval from the whole family. The fruit makes it sweet and the coconut creamy. The chia and flaxseeds adds lots of goodness including Omega 3, fibre, calcium, protein, antioxidants and vitamin B.
It’s also quick and easy to whip up in the morning, even more so if you have a Thermomix.
- 1/2 cup nuts of choice - I like almonds and macadamias
- 1/2 banana
- 1/2 pear
- 2 tbs chia seeds
- 2 tbs flaxseeds
- 2 tbs coconut cream
- 1/2 cup water
- 1/2 tsp cardamom
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp vanilla
- Sprinkle of sea salt
- Blend nuts in food processor until crumbly
- Add banana and pear and process until mushy
- Place all ingredients in a saucepan and simmer until thickened - approx. 5 min
